All ingredients get ready. Greens are chopped, tomatoes chopped, dry onions chopped, green chillies-dry garlic-ginger corsely crushed together, Brinjal r roasted and smashed.
Roasting Brinjal: First apply oil on the outer skin of brinjal and roast it directly on the flame. Slowly slowly turn all the sides and roast it. Insert the tooth pick in brinjal and if it easily got inserted then the brinjal is been roasted perfectly. Let it get cool take out the skin and smash the brinjal.
Take a pan/ kadai on medium-length flame add oil, cumin seeds get crackled add asafoetida and Chopped dry onions. Saute it till it get golden brown.
Now add green chillies-dry garlic-ginger crushed, chopped white part of green garlic and chopped white part of green onions. Saute it till their rawness go away and super Aroma start coming.
Now add chopped tomatoes and salt. Saute it properly till it get tender smash it with spatula and saute it. Oil will get start releasing.
Time to add all masala. Turmeric powder, Red Chilli Powder, coriander powder, cumin powder. Saute it for 2 min. Oil get released here
Now add roasted and smashed brinjal. Mix it well with all masala. With the help of spatula.
Once brinjal get mixed very well and start releasing oil add all chopped Greens leaves of green garlic, green onions and coriander leaves. Mix it and add 2 big spoon of water. Close the lid for a min so all green leaves get little tender. Open the lid mix the bharta very well. And keep saute in oil for 3-4 min more so the oil get released and Bharta gets ready perfect.
Bharta is ready. Served with Rotla, roti any Parathas. Enjoy with dear ones
